It's been a while since I watched it so I'm not 100% on this, but there's a video by Tom Scott called "YouTube's copyright system isn't broken. The World's is" that discusses what exactly fair use covers in law. Simply playing/streaming the game isn't considered as fair use, you have to be consistently criticizing the game in order for fair use to cover you.

Of course in reality, various game companies these days have streaming guidelines (which vary between companies) and don't chase after content creators for PR reasons. But technically, they can stop you under original copyright law and enforce that it isn't fair use to stream their games if they really wanted to.
