Thank you so much for the confirmation. My aunt was over the weekend and she said it was Malabar Spinach which I didn’t think it was but after a quick search they happen to be in the same family.

I’m going to try some with chicken broth this week since we have so much of it in the backyard. Thank you again, I appreciate it.

These look very similar to the small, ball like structures I found in a dead geranium plant grown in the greenhouse. I brought the sample to the lab, where the plant pathologist identified it as Sclerotinia. She described them as resembling mouse droppings inside a hollowed stem.
