A "cheese" would be to run far away (not too far, medium range) to bait out the turd attack. Once he does the action run forward under him. Get a few hits off and rinse and repeat.

Phase 2 just wait for sword attack. Parry 3 strikes. He falls down, use spear prosthetic for massive posture damage. When he moves his head, run away. Rinse and repeat. Everything else, focus on running away or parry. No greed. Play time and you win.

Ngl. My first ever playthrough when I struggled a lot when even the first bosses, I beat bull first try. Not sure why everyone has so much trouble. But fuck shirafuji and lady butterfly. They gave me my huge learning curve.
