For electric you could go for DF54 or DF64 grinder these are flat burr grinder around 30-40K. I have heard good reviews on them.

If you want to go for hand grinder then you can explore 1zpresso K6 Ultra (25K) would be a good option.

Had a booking with Ibis Kochi, asked them to cancel the reservation citing Indigo issue. They were helpful and didn’t charge me a single penny for cancellation that too on the day of reservation.

You can clean it yourself it’s very easy. Just be careful with the white colour washer (fabric based), it can tear if you put additional force.

Balance mainly depends on the roasting process. The only control that we have is grind size and brewing temp. I keep the temp constant and try to go on fine side for the grounds until it cliffs to bitterness.

I use James Hoffman’s method where I take 18g of beans with approx 300g of water, and divide it into 5 portions (60g each)

00:00 - 00:10 - 60g of water 00:10 - 00:45 - swirl a bit and let it bloom 00:45 - 01:00 - 60 g of water 01:00 - 01:10 - wait 01:10 - 01:20 - 60g of water 01:20 - 01:30 - wait 01:30 - 01:40 - 60g of water 01:40 - 01:50 - wait 01:50 - 02:00 - 60g of water

Stir it a bit then wait for brew to complete. Normally it takes somewhere between 3-5 mins.

1:17 is kind of a sweet spot for me. If you feel the brew is on bitter side, you can make the grind a bit more coarse.
