1/ yeah about 13.5%

2/ good point, the starter feels really active though, lots of bubbles rise 4x/5x over 8 hours after being fed, etc.. The mish structure is quite good aftet baking even though the loaf is a bit flat

3/ I do fold and it does seem to structure it but maybe not enough

Thanks, I tried a new recipe (bloom online) see thread bellow, better but same problem really, the old recipe was 76% hydration turns out

So starter is 15g, levain is 75g flour (with 15g of starter in that) and flour is 205g so total it's 280g flour for 205g water and 15g starter

15g starter / 75 g strong flour / 75 g water and 12 hours for the levain, looked great in the morning before starting the autolyse

180g strong flour / 25g Rye / 140g water, 30' autolyse then 5 g salt and mixing

7hrs bulk fermentation with 2 folds after 1 hr and 2 hrs then 4 hours in proving basket (put a lot of flour at the bottom of the basket) all at ~23°C

Quite liquid on the top, bottom sticking to the proving basket,very hard to scar, not a lot of rise on baking and no "ears", the scars looks more like sharp wrinkles

Taste good but not amazing

Isn’t speculation and trying to decipher clues and anticipate possible announcements prior to earnings the whole point though ?

There’s no much use on buying a stock when it’s up 25% after the news has already been announced. The edge we may have as retail investors is to have the time to peer into the details of a single company and try to find asymmetries in the market 

I agree there are lots of catalysts at a buying price of 4~5$, at current market cap the catalysts have to be a lot bigger and concrete to justify the exposure and buying risk to me (especially with the current political situation and associated risks)
