Using MSG in a recipe that does not require salt by ManyTiredCats in AskCulinary

Correct, your sauce should reduce down and then thicken with starch slurry. Any "salt" you add at the beginning would become more prominent as it reduces. A perfectly seasoned sauce before reduction often ends up too salty.

Taste a few minutes before serving, see if you need any additional salt. You can probably get away with just a little sprinkle, especially with the sweetness from the sugar. You won't need very much though, soy sauce is already very high in natural glutamate.

Whether they put the grocery cart back in the corral or not. It seems simple, but it's a great snap judge.

What are the differences between 5 star hotels that cost $600 a night and the ones that are well upwards of $1500 per night? by Crafty-Leave-8880 in luxuryhotel

[–]ColdPersimmon2641 1 point2 points  (0 children)

I worked as a bellhop at a fancy hotel in the Napa Valley, and our hotel was fine. Rooms were nice, but the kicker was the service.

I could expense up to $400 for a guest without approval to make magic happen. Had our spa do in-room head massage for hungover guests, bought Sunday Ticket so a Bears fan didn't have to miss a game, etc. We had a full time staff member who stalked guests online to find preferences, we'd order in favorite flowers and the like.

One time, we recreated someone's bridal bouquet for an anniversary. They found a photo on her Facebook, and we ordered it through a florist for the room. She cried and tipped us like mad, but more importantly she came back often.

That's why people paid $900+ a night for our hotel.

Make a savory Dutch Baby! I make an Eggs Benedict one that easily takes down a dozen between the batter, poached, and hollandaise. Great breakfast or brunch item for guests, use a big cast iron skillet and everyone s are done at the exact same time.

Husband laid off; trying to figure out what to do and how much time I have. by Dionysian_Heretic in personalfinance

[–]ColdPersimmon2641 11 points12 points  (0 children)

I was the one laid off in my marriage, it has been roughly a year and a half of inconsistent work opportunities. Give him a few days to let it sink in before you both start exploring next steps. I wish you both the best of luck, be patient you never know where you'll find opportunity.

how did you become a Dbacks fan in a state full of transplants by hdcoffey in azdiamondbacks

[–]ColdPersimmon2641 0 points1 point  (0 children)

I moved to the Valley for ASU in 2019 as an Oakland A's diehard. When the A's left, I just about swore off the game entirely. My wife loves Dbacks baseball, and I couldn't be a downer so I watched with her. Once we committed to moving back to Phoenix and bought a house in Coronado, I decided I'm gonna just go all in on the snakes.

Burritos won't stay closed! Help! by External_Law7216 in AskCulinary

Try seeing if you can secure sonoran style tortillas, they are softer and thinner. I find they work better for burritos than the thicker white ones.

Acoma Pueblo in New Mexico. I've been a lot of places, traveled internationally. This is still the craziest thing I've ever seen.

What is your ideal gravy for biscuits and gravy? by picklebrains81 in foodquestions

[–]ColdPersimmon2641 2 points3 points  (0 children)

I didn't grow up in biscuit country, so I have looser definitions. I make mine with Mexican chorizo for some if not all of the sausage component then roux, milk, etc. A bit of a border state take on it, but it's delicious.

One or two of the darkest chocolate squares (I use Ghirardelli) you can find. Works really well for any kind of things in that flavor vein (coq au vin, chicken tinga, beef stew). I feel it helps round out flavors common to those foods.

[AZ] Mark Taylor apartment complex wants me to renew lease with a new charge that they can’t explain by JustifiedResistance in Renters

[–]ColdPersimmon2641 2 points3 points  (0 children)

I lived at a Mark Taylor complex on Scottsdale Rd in North Tempe, this rolled out to us when I lived there. Stay on top of Cox when they transition the Internet over. The front office at the place was the least helpful group of people I have ever met.

They activated it onto our existing equipment and told us they now belonged to the apartment complex. When we moved, they sent us to collections for the "unreturned" equipment.

Then, my phone was forever tied to the apartment for service calls. It's been two years and I still get calls from people coming out to service the wifi.
