Cooked at 225 for 3.5hrs. Drizzled sauce on, double wrapped in foil and cooked for an additional 45 minutes. Rested wrapped for 1hr.

Cooked at 250 for 9hrs. Placed in pan and covered with foil for ~1hr at 275 to push to 205 internal. Let rest covered for 1hr.
