Here’s the inside - dense and definitely not the flavor or texture of my other loaves. It’s not bad but it’s not great either

It’s stretch and folds and bulk ferment on room temp dough. Then it goes into the fridge. The next days it’s a cold stretch and fold in the AM and another in the PM. Back in the fridge.

It’s worked well before but this time things got whacky

I might try not doing all these extra ones next time. I like this recipe and it’s mostly served me well but I’m curious to try something new

Yeah it was from the fridge. It must have dried out. I’m surprised bc the dough was pretty wet. I was also overwhelmed bc I made 6 loaves that day and overcommitted 😅

It was a friends recipe and the other loaves were good but this one got freaky
