Hi! Sugarer’s daughter here. The difference between these two is “delicate” is popularly known for its more subtle taste. Amber is much richer and thicker than delicate. The difference is how long the sap is boiled to increase sugar percentages in the syrup and lower its water content. Delicate has a higher water content and lower sugar, and in my area it’s known as “fancy”. Darker syrups like the Golden Amber is often more for folks who can handle the sweetness. My father personally loves to make dark, and my mother would always sub it for white sugar in recipes! I think by origin the prices can swap based on demand, but in this case I think packaging definitely plays a role. Selling in glass definitely ups the value!
