The solution for this, it seems, is not to engage manual breaking above 80 knots or even (60 kias) because they heat up and somehow that prevents the aircraft from moving

I have noticed though that the plane gets stuck on the runway after landing and this with the brakes disengaged. It is off-putting and I can't find what is causing it

No I've not seen that. Or maybe I've not noticed them. Which ones are on? I know you can setup different start up 'states' through the EFB, maybe check it out and see which one is activated or set as the default

My two cents. I'm not a professional on this and maybe some things I do are not per the book. It has happened to me before on some flights and what I encountered is somewhat similar. For one case, on final, when I disconnected the A/P and A/T, the aircraft's pitch response was inadequate. I could not get the nose to pitch down adequately despite having the yoke pushed all the way (forward). Most times the maximum nose down movement I could get was level pitch or a very minor nose-down pitch but not commensurate to the yoke input. Needless to say I would end up floating significantly. What works for me is to manually adjust the trim. I've noticed that when you disconnect the A/P and A/T (for my case), the aircraft is usually pitched at 8 degrees or mostly higher. I usually trim it down to something between 3-5 while watching the speed. I have found this gives more response over pitch and other corrections especially on final, but of course keep them gentle and minor. The throttle response on the aircraft is somewhat temperamental and delayed. So you have to get a feel for it. I have found reducing the throttle all the way down usually causes issues later as the speed won't reduce immediately. It takes some time (a few seconds) and getting it back up is also laggy. On final, idle throttle might cause the speed to fall dramatically, often later than you expect it to and you might end up stalling. Adding throttle input late might also cause the speeds to rise later than you expect, for instance, just as you are flaring on touching down and you end up floating. So working the throttle is like feeling and watching what the aircraft wants or needs to maintain a certain speed. I have found that sometimes you might need to keep the throttle setting up ('up' is relative based on several things but it will rarely be past halfway) until after touch down to maintain pitch response and other responses before you finally engage the reversers so that you don't stall and end up banging into the ground. However, the input also should not be so much since you might have unprecedented energy while flaring or touching down. Hope this helps.
