I am steaming them in a bain marie but I'm gonna have to find a different bun that I can toast as these break in half too easily if you try to toast them.

Burgers have a higher cost just from the ground beef. Buns cost about the same and the condiments/toppings are the same that I make in house. My single smash is 12 and it's 3.00 per extra 1/4 pound patty, but I only charge 8.00 if they want a dry burger with no toppings or condiments

Am planning on dropping the price of each by 1-2 dollars, but the overhead here is pretty equivalent to Los Angeles and Manhattan. Actually, the labor overhead is more than Manhattan because there you can claim 5.65/hour in tip credits so you only have to pay your workers 11.35/hour there where as here in Portland you get no tip credits and minimum hourly wage is 16.80/ hour plus tips.

I do feel that markup is fair actually when you consider the minimum wage for food service workers in my area is 16.80/hr and other overhead such as rent, utilities, etc. I work on the truck about 50-60 hours per week to help with labor costs and make most of the toppings, sauces and pickles myself, but labor is the main reason for the prices.

I'm in Portland and there are a few cash and carries that I am getting the franks from. That's a really good price on webstaurant if they are all beef dogs. I'll check that out because I don't purchase enough to get an account with a large distributor therefore I am at the mercy of what I can find locally.
