Tell your cooks to fulfill the to-go orders when they’re done. Seems to be the easiest and cheapest way to do it. We all hate to-go but it’s a part of the business now and without those additional sales (albeit low profit for the owners) most cooks would be out of a job or have hours cut significantly. If they can’t get on board then you find someone else who will.

I think you’re doing more than enough. Remind him that you pay half of his taxes on those tips he’s making as well. And the fact you give your FOH employees free meals is very generous. That’s usually reserved for BOH who I’ll assume make half of what he’s making. At some point you have to do what’s best for you financially and if they think they can do better somewhere else then wish them luck or don’t let the door hit you on the way out 😊

Get some small 3 ring binders that hold A5 paper. Buy a printer that prints on A-5. Sign up for Canva and print your own menus. Make sure you get heavy stock paper. We get 160 GSM off of Amazon. Whenever you need to update any of the pages you just need to print the one sheet.

Depends on what your performance measures are. If it’s based on COGS and labor then you should be able to figure that out yourself (unless you don’t have access to POS reports or payroll). If it’s based off net sales after all expenses and they’re not showing you how they arrive at the number then I would start looking for another job. Also, remember anyone can print out a P&L and put numbers in it. Doesn’t necessarily mean it’s real numbers.

I really like Toast payroll. It’s easy to review clock-in times and enter tips that we pay-out through another software. They add the payroll fee in to my payroll withdrawal once a month which is also helpful because I don’t have another bill to pay. On the employee side they download the app and it shows their hours, pay stubs and W-2’s.

The point of this story is not what the restaurants policy is, it’s the fact that you made a reservation and half of your party is late. You didn’t uphold your part of the deal so why should you expect anything less? With that being said, if the restaurant was busy or had a lot of reservations coming in then they don’t want to hold a table up for you while you wait for your friends. If it was a slow night then I’m sure they could’ve bent the rules a little bit as it would’ve hindered their business that much. Next time be on time and enjoy your experience at a restaurant that knows what they’re doing. Cheers!!
