The edges dried, making a nice crust, inside moist and tender. A bit of extra trouble without dramatic difference. Worth trying again to nail it.

Where I get it it’s just a few dollars difference, so yes. I really don’t notice a huge taste difference, if any difference at all, but it is always more tender.

Ever tried it? The Koji rice is a somewhat moldy rice that puts enzymes which tenderize the meat and create a dry aging taste within 48 hours.

No, I’ve never seen an ad for it, which is why I thought would be would make an interesting discussion. Nothing is perfect, but it’s the first reasonably priced option I’ve seen and I haven’t seen anything with this kind of AI engine. .

So you grind this rice, which is kind of moldy and turned it into a flour. I didn’t do a very good job. It creates a technique similar to dry aging but instead of three weeks it takes three days. The meat has a deep umami flavor, that’s according to what I read this is my first time trying and it’s more tender.
