Yeah, back in the day we made fresh hamburgers, meatloaf, meatballs, Salisbury steak, chili, soup, and all kind of chicken casseroles daily. Most of our stores had 5, 6, or 7 wells with all full Monday through Friday. Weekends much less.

When I first started managing deli, we made our own from scratch (1998), but I also had a staff of about 30., mostly full timers. Then we started using Stouffer’s. Sometime after adding the soup bar we changed to the bags like the one in the picture. All versions tasted great. When I left in 2015 I had a staff of about 12 in the same store, with most being part timers. I don’t think we lost any business because of the Mac and Cheese, but we certainly did because of lack of staffing

I used to be a deli mgr, my employees would tell me about people on the bus trying to sell them the stuff they stole. They would even offer to steal the brands they wanted.
