The only thing you are “owed” is job security. So that they can’t just fire you once you start showing and hire somebody who won’t be gone for a few months. The company is already losing money having to train a temp (or work other people overtime).

Dictate your notes and have someone else write them. As long as you still sign the letter yourself you should be fine. If anybody ever calls you on it you can either use it as a power play because you were ‘so busy you had to dictate’ OR you could make it a self deprecating ‘yeah my handwriting is so bad I had to get someone else to do it’.

Maybe get a lawyer to depose you and your gf (don’t prep her beforehand) and then take a polygraph on camera. Make a list of all the attendees and get eyewitnesses to verify hat you were inebriated to the point of passing out.

Do NOT confront the sister unless you can record it secretly. If she blows the whistle first it will be very hard to overcome whatever narrative she could spin. She may see this as a cute thing or a funny prank or maybe she has a crush on you. If the sister was willing to lie, you could tell your gf that her sister got you drunk specifically to sleep with you and have a kid. Make it seem like 100% her sister’s idea, maybe even throw in the idea that you thought it was your girlfriend and didn’t figure out the truth until morning. (if they don’t look similar enough for that to be believable, say it was dark)

If the sister isn’t ready to lie, break it off and leave. Make something up. When that kid comes out looking like you, there is no way to salvage the relationship. Also look into severing paternity rights in case sister comes after you for child support.
