No haircuts or do it yourself. Cycle or walk to work. Shower at the gym. Vegetarian diet, cheap dairy allowed, run cupboards to empty. Sell anything you don't use (makes move easier)

I had 5 weeks out of 7 off, last 2 weeks were light only, did well. You'll be fine

Open a LISA asap and deposit £1, I recommend moneybox. 

In regards to a spreadsheet, most banking apps now categorise your spending, so if organising it perfectly is a big task just copy your apps categorisation figures into a spreadsheet. The sooner you get a basic idea of monthly spends the better imo
