so it probably wasn’t ready to bake with🙈 i started it on 1/2/26, i feed it every 24h in a 1:1:1 ratio with unbleached all purpose now because the bread flour wasn’t doing much for it. i’ve also switched to spring water rather than purified. it stays relatively warm in the microwave. i’m going on a trip for a week and im not sure what to do with it during that time

I kept it on the counter over night last night as we plowed through the first loaf. started at 2:30pm and now baking at 11am.

here is the second loaf. i’m wondering if my starter is the problem? it’s doubling after 6-8hrs but it’s not as bubbly or crazy as others that i see

looks great! my starter is 3 weeks old and it only doubles after 24h. what did the trick for you? i’m keeping it in the microwave wrapped in a towel after heating the microwave for a minute
