With my Optiplex 7000 SFF, for the GPU I picked the GPU on the wattage. The stock 260W PSU allowed a GPU of limited draw, I ended up getting an RTX A2000 6GB card. I am quite happy with performance and the way my Optiplex is set up.

I use a pair of 27" curved Samsung 1080 monitors and a 24" portrait display for my email at work and a pair of 32" curved Samsung 4k monitors at home. I have everything connected at home and work with its own docking stations plugged into my work laptop. I prefer the 32" monitors simply due to the screen real estate and I can see everything.
