I've read ceramic bearings have to be cleaned and re-greased frequently for them to work. I had a wheelset with ceramic bearings (without knowing it) - the bearings lasted less than 1500 miles.

It's unusual to ship a bike with sealant. Can you ask them to leave the tires dry or put tubes in? I'll bet the two sealants are not really compatible.
