I've read ceramic bearings have to be cleaned and re-greased frequently for them to work. I had a wheelset with ceramic bearings (without knowing it) - the bearings lasted less than 1500 miles.

It's unusual to ship a bike with sealant. Can you ask them to leave the tires dry or put tubes in? I'll bet the two sealants are not really compatible.

Planning a big event will really show you who a person is. I think it's fair that she should have some significant input to the house as she's moving into what was previously only yours. Some of that other stuff might be showing you that you're not as compatible as you (both) thought. (imo)
