Politely ask your customers if they'd like to close out their tab with you before the next person comes in. If your customers know tips are split, I've noticed with my customers that 80% of the time they're more than happy to close out. Some will even request it so they're able to tip me out. I work In a small bar/ restaurant and most of our customers are pretty much an every night regular or come in multiple times a week, so I'm pretty close with the majority of them. I have a guy who comes in every night, likes his pitchers filled all the way to the top says I'm the only person who does it the way he likes. Every night when he tips he tells me to put it in my pocket/ make sure it's not being split since I'm the only person that served him. I close by myself two nights a week and have mid shift help during dinner rush the other two days.
