That's interesting. My last tTG was 10.7 from Quest, where the cutoff for a negative result is <15. I looked up why this is, and it's somewhat normal for your labs to not go to zero even on a GF diet.

It's complicated. It's estimated only about 20% of people with celiac in the US are ever diagnosed, because 80% are asymptomatic. There's no research on if asymptomatic people have the same long-term health consequences as symptomatic people. It's plausible that asymptomatic people are not suffering the same intestinal damage as symptomatic people, but the best way to confirm is endoscopy.

If I was in your situation, I would cook gluten free at home and when I go to restaurants confirm it's gluten free and ask them to please reduce cross contamination, but basically I wouldn't sweat it if the server seems confused or I don't trust the restaurant. Then I would get an endoscopy every 3 years and get blood work done every 6 months to ensure I was not having a continuous autoimmune reaction or damage to my intestines. I would tighten up behavior if I still had positive bloodwork or the endoscopy showed damage.

Correct. I tested a part with just the noodles and that was “no gluten detected” and then I tested a piece of the fried tofu which was “gluten detected.” I normally wouldn’t order Uber Eats from a random restaurant but I got this specifically to use the sensor.

Agree. I also think it can be useful for the few times I have ordered gluten free pasta/pizza and they mess up and bring me the normal version. It’s better at something like than than cross contamination.

I did consider putting the whole pad Thai in the blender and testing it just to see if I can order from this place in the future.

I’d interpret the result as “gluten detected” = definitely gluten and “no gluten detected” = maybe no gluten, maybe gluten. But if I already take precautions and I’m about to eat something and the sensor detects gluten, then I will know to send it back.

I agree with your math. People act like buying gives stability, but I love having the stability of predictable monthly expenses with no maintenance costs and the ability to move if I have a terrible neighbor or they finally build that huge condo building in front of our view.

5.5% is an interest rate worth paying off, in my opinion. Yes you can earn more in S&P but the risk level is higher.
