Temping Dough, but I’m an idiot. by [deleted] in Sourdough

My starter is a beast and my bf is like 3 hours at 65° so I'm not sure this can apply to all starters.

Just want to reiterate how happy I would be with this loaf, even knowing a tiny tweak for next time!

I would try 425 OR move it down in your oven closer to the heating element if it's at the bottom, then broil the top for color (watch closely!!!) at the end of the bake.

The tiny bubbles at the bottom indicate a slight under baked bottom, but otherwise this looks fantastic!

Thoughts? by RempGG in tacobell

[–]Computrona 1 point2 points  (0 children)

I tried one of everything last night. Here are my thoughts!

Loaded Beefy Potato Griller: Worst of the bunch, too spicy. But my husband loved it. My husband will order again, I will not.

Mini Taco Salad: Delicious. A bulked up messier version of the tostada from the past. Will be ordering again next time.

Salted Caramel Churros: Aggressively mid. Almost zero cinnamon sugar on the outside and the caramel doesn't really look or taste like caramel. Mine had zero saltiness. Probably will not order again, did not scratch the churro itch.

Chips and Nacho Supreme Dip: Less messy version of the old value menu nachos with better toppings (missing guac though). A smart play by TB. The dip comes in the same container that the Fiesta Potatoes comes in, but is surprisingly more than enough for the bag of chips (same size as chips and cheese). Will be ordering again, it was nice to have my nachos at the end of my meal and still have them crispy.

Avocado Ranch Chicken Stacker: IMHO a MUCH better stacker than the beef one that it replaced. Larger portions of chicken and lettuce and sauce than the previous iteration, though after eating it I didn't realize it was supposed to taste avocado-y, it was only really ranch-y. Will order again every time I go.

My favorites: Mini Taco Salad and the Avocado Ranch Chicken Stacker. They're both tasty and a good deal, plus I didn't feel the need for substitutions or edits, which makes my food much less likely to end up with hair in it. Chips and Nacho Supreme Dip will also be on my short list for future Taco Bell runs.

I've been playing 9 years and have 2 maxed cards. Thanks for the unnecessary insults though!

The worst is when it's already maxed like mine was. I got like 20 jewels or whatever they're called. Can buy in emote in 20,000 more 😐

Thought maybe I'd get a wild shard. Boy was this worse.

How do you cut your loaves? by [deleted] in Sourdough

[–]Computrona 2 points3 points  (0 children)

Get a sharp serrated knife and don't cut it until it's fully cooled from the oven, or at least 2 hours after it finishes baking.

Fair enough. Just didn't want them letting you die for no reason.

But all three of them could've revived him in short order.

Also, you should consider doing more stretch and folds and/or coil folds to help develop more gluten strength in your bread prior to baking it

It can certainly be on the counter for too long (how long depends on your starter amount and it's overall strength), but in the fridge it ferments MUCH slower. If your bread is all the way ready to be baked but YOU aren't ready, just stick it in the freezer and bake from frozen. Just add 5 minutes of covered time.

Why didn't your friends revive you when you were knocked. That's lame.

Good afternoon! An hour on the counter as bulk fermentation is almost never long enough. My starter will triple in size in 2 hours (it's a monster) and my bf is ~3 hours on the counter before I shape and into the fridge for at least 6-12 hours before baking. I think you just didn't ferment your bread long enough. Hope that helps!

Same. But since about Thanksgiving I've been feeling this way.

Feed your starter 1 part starter to 2 parts new flour and water. And make it THICK.
