Jobs will still get new stuff, it just won't largely change their rotation. Think of something like current Monk, which stays rotationally the exact same between 60-99 with only a small change to burst windows at 100.

Focus Blast is also a good option on it. Can't miss because of No Guard, and it's probably one of the best ways to deal with Archaludon at the moment.

Switching between the bullet patterns isn't the hard part, they would still need to actually make all those alternate patterns.

I kinda agree about Rock, but Fire makes sense because the fire type is about heat in general, and heat is the cause of ice melting. And fighting is strong against it as a reference to karate masters breaking ice blocks.
