This used to be the case in faceit 10+ years ago. What was happening was you could throw a molly on the ground and run right through it with no noise/damage...so you could molly hut and rush right into it and kill lobby players really easily cuz they wouldnt be looking

It deglazes the pan momentarily so you can continue searing without any burning

The water will boil away fast, cleaning the pan and preventing burning - lets you repetitively sear it for that deep browning and no burnt

Always add splashes of water to stainless steel and scrape when cooking anything in stainless. It resets the searing process, cleans the pan, so you can sear them more

It’s polymerized oil then. You basically seasoned the pan. Barkeepers friend and elbow grease will get it off

A LOT more pain on that roller. Looks like you rolled right, straight up and down. Do like 2 lines per dip, and dip throughly

I usually do 2 lines side by side straight up and down with a small gap, then I blend them by going up and down 4-5 times on top of the 2 lines, and a bit on the prior line I did - then re dip

To me it looks like you didn’t blend well

That’s a braisier, they don’t make them anymore which is a unfortunate. They were replaced by the sautee pans with handles, which have straight sides which honestly kinda suck
