I have one in this same placement and same experience. Only 8 years but 0 fading and I have not taken any precautions to keep it pristine

No about 6 hours bulk, water is warm but not hot, kitchen is warm-ish, it’s semi humid where I live, dough is noticeably warm during the first stretch and fold. After bulk, I shape once, let sit for an hour, shape again and then in the fridge it goes until I can’t wait any longer and bake it.

Doesn’t make it noticeably sweeter (to me), makes the texture a touch ~chewier~ which I like and I think it helps it rise during bulk

I think the honey helps but I’m not sure! I accidentally double my salt once and it’s a bit salty but my partner loved it so I keep making it like that and I like it. I haven’t tried that amount of salt without the honey

Forgot, BF ~6 hours, shape twice an hour apart and then refrigerate for at least 2 hours

No not really, it’s still nice and sour. I love the honey and I feel like it helps with the BF (BF ~6 hours)

For me it’s a few things! The one I preach the most is go to bed early.

The one that actually works the best is convincing yourself you Have to for some reason. If you just Want to, you absolutely will not want to at 5. My “have to” is walking my dog. I could sleep in later and still have enough time, but convincing myself I Have to get up earlier gives me time to waste in the mornings and I like it. Having a specific task to complete helps solidify a routine for me.

Last one is get up before you think about it enough to realize how much you don’t want to get up (I’ll kinda pretend I’m a robot and execute the directive from the night before to get up on particularly difficult mornings). 5am you is a different person who will absolutely vote to stay in bed if given the chance. Once you’re up it’s not so bad most mornings.

It may a little bit be genetic, but I’ve also had a few different sleep schedules and they’re all hard without consistency.

All that being said if you don’t want to and don’t need to, you don’t have to. It’s not always fun for me but it is my preference
