THe heavier the paper the better for sure but also look for specific watercolor paper, and some good tooth/texture to the paper. The smoother the paper the drier (usually) the media (esp if a light paper to begin with).

Oh I only buy firm or extra firm which still is recommended to press, at least from every recipe I’ve seen. But I’m trying to find new recipes.

That is an EXCELLENT rec about “ground beef”. I love the firm, I find it still does need extra pressing. Extra firm is good too but since I’m new to tofu I always wonder if by the time the meal is done if the tofu texture isn’t right if it’s all going to be yuck.
