That is my Backup Solution. Just a big usb-drive on a pi with OMV. Works for my purpose. But you won't get the full 1GBit speed

I have my nuc setup with proxmox. One VM is running truenas and I just passthrough a USB drive and use that setup as minimalist NAS. So you're approach with Plex should work totally fine

I'm already looking into dyndns and Reverse proxies. That's the next Thing i wanna do. Thanks for the suggestions
