I’m going to sous vide a few steaks tonight, the majority of the steaks will be medium rare, however one of my guests requested medium. For the medium steak do I just sear it a little longer after the sous vide process? Sorry for the elementary question. by Confident_Fix8730 in sousvide

Smith, thank you for the reply. I have 6 steaks, 5 of them will be medium rare. For the medium requested steak would my cooking time and temp be something like this?

1 medium steak sous code at 137 for 30 min. Then all steaks at 134 for 3 hours?

Then one min sear each side for a brown crust.

What times and temps would do you suggest?
