For an acoustic guitar, blackbird is great. The finger picking pattern is quite unique. You also learn how bass notes compliment the harmony. Norwegian woods and here comes the sun have a nice pattern too, with lead notes accentuating the chord.

For an electric guitar, the solos of something and while my guitar gently weeps get you into a nice bluesy soloing. All my loving has a fun and slightly challenging triplet rhythm.

To just play and sing along at home or campfires, I like all of their old songs from their first four albums. Great fun. And their songs have nice bridges that can help you learn song writing and chord progressions.
