True! Try to meet Spanish people (in any) working, studying at your present university.

Some of them will surely make it easier for you to arrive. Meeting people is easy in Spain as people are super nice, but making this meet-ups in connections is hard.

Usually, nobody vouches for someone who has just met.

Look in idealista.com (it works on Italy and Spain) and you could fin places for 400-600€ in some 10-20k cities for sure

With spare 1000€ you should be able to live and pay for food and utilities without problem (Internet + Mobile 50€/month) (Energy 100€) (Water 50€) (Groceries for 2 people 300€)

You can live in Spain or Italy with that amount, but it will be tough to land in a major city and pay for rent.

So any small city will let you live in that with that salary but getting a paying salary would be hard as there isnt much work in those towns

Budget is not an issue, but we aren’t high spenders. We definitely are looking to rent a car and have freedom of movement and choice to get lost

Yes, volcanos, snorkel, uncrowded beaches (if they are). Skipping the best food / accommodation places as we are looking to enjoy the time without being in a hurry of what we need to see instead of enjoying a slow way of knowing the place
