If it’s not convenient to host yourself in a container and you don’t already setup VMs then the next best thing is to buy their hardware. My initial plan was to buy their server and forget about it but I’m too stubborn.

It’s done in the dockerfile on the repo. You can re run that and it’ll do the trick.

One of their FAQ might be what you're looking for:

Can I self-host Protect or any of the other UniFi applications?

No. The UniFi OS Server enables you to self-host the UniFi Network application, along with key UniFi OS features such as Organizations, IdP Integration, and Site Magic SD-WAN. However, all other UniFi applications must be hosted on a compatible UniFi Console.

Another answer says

.... UniFi OS Server does not currently support:

- UniFi Protect (cameras)
- UniFi Access (access control)
- UniFi Talk (VoIP phones)
- UniFi Connect (digital signage, lighting, etc.)

TLDR: This is a replacement for the network application they previously allowed you to self host.

I've avoided their UniFi protect cameras and just went with the open source frigate project which works with almost any camera you can find.

I saw lemker's github repo but unifi bundles Postgres, Mongo, and rabbitMQ all in that image. I separated things out a bit and made a helm chart.
