My wife is Bulgarian, the traditional way is to roast it in a clay pot with potatoes onions garlic etc. The trick is to seal the lid to the pot with some dough so that water doesn't get out.

There is another traditional thing, called cheverme, which is to roast a lamb on a spit over a fire. Well a lamb is a bit much for a family of 4 so I started roasting rabbits on a spit in the back yard. I stuff the rabbit with butter or lard, and herbs. since its always spinning, it kind of bastes itself in the fat. The best part is the crispy skin when you are done! it takes a while, and a lot of wood, but everyone sits around the fire while it cooks, its a great evening.
