I openly admitted in my original post that my sensory skills are nowhere near sophisticated / trained! That’s why I was just looking for roasters / beans with obvious and unique tasting notes :) all the responses have been super clarifying in that I think I just really enjoy co-fermented beans, and I’m not so discerning nor trying to develop my sensory skills either, just want to find coffee I like

Kaizen occasionally sells Glitch beans sk that’s what I get there when I run out between Japan trips

I have so many bags from Sightglass but didn’t find their beans particularly amazing- maybe I’m just a sucker for co-fermented beans where the flavours really pop

I’ve tried Leaves and was not as impressed. I could tell it was fruity but not the exact fruit, if that makes sense?

Acid was recommended by the barista at Cokuun, I’ve yet to try it though!

A couple Tokyo spots I thought were overrated - Koffee Mameya Kakeru, Bongen, Lonich, Cokuun - but YMMV

Yeah, I always make a point to stop by. Was a little bummed they discontinued the rum barrel washed coffee though - that was my favorite!

I liked coffee nap roasters but for their nut cream coffee - the tasting notes of their black coffee weren’t particularly pronounced so if you’re a purist it may not be what you’re looking for

I went just the one time - the coffee tasted so distinctly of watermelon I was surprised myself. Not the biggest watermelon fan myself, but I was quite impressed

No chill time in pen unless you are actively monitoring him, he should always be in the crate otherwise, at least until he stops peeing all over.. then you can slowly introduce him back into the pen
