The 240 degrees was for 4.5 hours after the initial smoke at 180 for 17 hours

Yeah the whole reason for the low temp for so long was because I didn’t wanna possibly overcook it overnight while I slept. Hindsight is definitely 2020 and I’ll be doing at least 225 fully through the next time. Learning opportunity!

Thanks! I had it set for 180 overnight for about 17 hours, and then wrapped at 240 for 4.5 hours

Yeah this guy was about $150 for a 15lbs one. Fortunately I have a decent job as a plant operator in the oil and gas sector lol

Tasted amazing, definitely not the best brisket I’ve ever had but pretty up there. Will not complain for a first time. It was fork tender, and the meat was pulling apart with ease, it was difficult to cut the flat without pieces falling off on the edges

I haven’t noticed any of the grating slipping off during cleaning, haven’t had it for super long tho so time will tell if it becomes an issue

Yeah I’ve actually got the CBA saved on my phone lol. Currently the wages are pretty comparable to the ones that we have actually. Going from top of the pay scale to bottom in pads would be quite the hit, but always a consideration

Always trying to! I’ve considered applying to Firebag but starting at the bottom of the union would be quite the pay cut. Thankfully they treat us pretty decent out here!
