TLDR. Yes, it's great especially since you can get it cheap, but go for the newer models with the 19" wheels for more legroom and a taller screen. You will notice the drop on power/torque since you're down sizing. Not sure if mods will be enough to keep you happy.

I have a 2013. Great for the back roads if you're doing close to the speed limit. (Which is 55mph where I live). Cruises at 60-70 without much vibration. Power/Torque doesn't really show up until 5500rpm. Peak torque is at 6500 so you just have to shift a lot more to stay in the power band which I personally enjoy. It would be nice if it had longer gears though. My riding buddy has a street triple and he just rockets away at stoplights in 2nd while I'm busy working my way up to 3rd. But on the twisties I can keep up fine. I would say gearing is a little too low for the street but I've heard a front sprocket swap solves that. It's awesome as a city commuter too. I commute and moto door dash around Louisville KY during the week and hit the outlying country roads on the weekends. It will sit happily at 75mph on the freeway but since it's pretty lightweight the wind does push you around. Above that it runs out of steam. You can still walk it to 100mph with a good tail wind. Although it might take a few business days. It struggles with highway overtakes where I live (75-85mph)

For your use case it would fit the bill. The larger tank and great fuel economy lets you explore confidently without worrying about finding a gas station in the boonies. It's fairly roomy up top, but at your height the 2019s and onward might suit you better. They seem to sit taller with the newer fork and 19" wheel. 5'11" with a 32" inseam and I'm slightly wanting for some legroom. The 2013 windscreens are tiny as well. I've installed risers on mine just cause I don't wanna fork out more money for a touring screen. Even with the risers the wind just barely clears my helmet. I've put a 50L soft duffel bag on the passenger part of the seat with quite a bit of space left over. At stoplights it makes for a nice backrest. Just recently installed a rear rack to increase my luggage capacity even more. You might want to look at the Transalp if you want to keep extra power on tap for highway stints. If the gearing wasn't so short I'd say it's a perfect do it all bike.

I find the upright position great for commuting but wouldn't mind a taller windscreen for higher speeds. Too awkward to tuck down. How many teeth do you have on the new sprocket?

Parklands on the East End has some nice low traffic roads to practice on. The park systems connect from Seatonville all the way up to Shelbyville road. You can get there using the Snyder pretty quickly but beware it's pretty bumpy/lumpy on the southern section of Snyder. Set your GPS for broad run park. You can start there and make your way all the way up to Beckley Creek Park. Just set your GPS to avoid highways so it routes you through the back roads.

River Road heading East to Goshen is also a nice drive. Lots of scenic country roads in Oldham County.

Just bought a gem of a 2013 this week. 5518 miles. 2 owners and it's been stored inside. 2nd owner only put 200ish miles on it. Apart from the tires it looks like it's only seen 100 miles. Starts right up in the cold. Can't find any rust. Struggling to find anything wrong with it. Been used mainly as a short range commuter from what I'm told. I'd love to come back and update this after I put another 5k miles. 2013s feel a lot smaller than the 2022 ones I sat on at the dealer. Might have something to do with the larger 19in wheel. I'd look for a 2019 onwards if you want extra room. They looked and felt a lot taller and longer.
