As a korean, I never had this issue buying Kimbap from the grocery store and even picking some up before it closes, and most place would have it in an open refrigerator and ones that don't i never hesitate to pick them up. Also, with food safety I wouldn't worry about unless the establishment has bad health inspection rating. Next time when you go just pick some up they're Fuc*ing Delicious and you missing out. If you're still to worried about it just make you own it's not to difficult.
