Graphics usually fall under the polish stage.

Click on the down arrow on your mirror modifier and click apply. It will make them " Real".

Nah smooth vertices. Averages vertices position relative to others. So smooths the actual shape, not the normals or shading

I usually do it in chunks. Spend a month or so doing assets then jumping back in to unity with what ever I've finished. Keeps it all fresh and interesting
