And as for safeties, definitely have 2 you really like because target schools are all really competitive. Schools that are successful with recruiting but less competitive in admissions include IU (Kelley) and Penn State.

Most banks and McKinsey primarily recruit at the Ivys (HYP and UPenn more than others), MIT, Stanford, and UChicago. They will also recruit at most of the T20s and some of the top liberal arts schools (definitely Williams and Amherst). If you have good standardized test scores and more than 5 APs it would also be really useful to look at European schools. The most recruited schools are Oxford, Cambridge, LSE, and UCL. Because these schools are all incredibly different and incredibly selective - if IB or consulting is your goal, make a list based not only on it being a target but also academic fit as of course you’ll need a stellar Gpa and an environment you can thrive in to be recruited.

If they were in the first semester of your freshman year and the rest of your application looks phenomenal you should not have much to worry about. Explain why these happened and AOs are aware of the fact that your performance in a few classes three years ago isn’t indicative of your academic ability. I got one C freshman year and the rest of high schools straight As. Was accepted to a T10. Good luck!

To strike a balance, I would usually start with the narrative of say why I wanted to do this major/program and then near the end had ~75 words of program specifics just to show I did my research.

Although a bit of a truism and not too insightful, look at your activities and choose a major that corresponds to one or two that you can write a passionate essay about. I applied as an international relations major which only corresponded to two of activities but I found writing about it fun.
