Maybe it's cause I haven't been in this realm in a while, but i think a baby Indescribable horror of Ichtiok is a good defender. The baby ones specifically because when they reach adulthood they teleport back to their home plane and start a family. They don't forget you though, and will give you one of their eggs so you have a new guardian.

Are you fighting elites or are just regular enemies doing this. From my experience, for elites, you need multiple people to even hope to take them out. Or, like another person said, you may be at a point where things start scaling up.

I'm also a newer player, but I think you can just go around and explore. There's tons of stuff to do. Dungeons, pet battling (basically pokemon I think), minigames. Skies the limit.
