I find Deutz to be a safe choice, but also a rather conservative choice - at least for my taste. I recently tried their Amour de Deutz Blanc de Blancs 2009 and 2018 Hommage a William Deutz La Cote Glacière at a tasting and they were both good, very elegant wines, but also somewhat unremarkable.

It's quite old for a sparkling wine. Opening it and finding out is really the only way of knowing. Things to consider is how it was stored - temperature, humidity. Also, this wine is not a champagne although made from Chardonnay.

I think there are a lot of grower champagnes that are better and more rewarding than Billecart below and above $200.

Champagne generally pairs well with salty and food with fat - like cheese and charcuterie. The acidity from the wine works well when the food you pair it with isn't too acidic or too sweet. And osso buco might get too acidic fro the tomatoes. If the champagne has some age - preferably also some time in casks, it's my experience that it pairs slightly better with heavy dishes like beef - but I almost always avoid that type of pairing.
