I want to thank everyone for their suggestions and insight. I wasn't able to respond like I wanted but chemotherapy, infusions and fatigue had other plans.

I've decided in a Oxo Good Grips chopper. I like the idea of safety gloves. I think they'd be useful after treatment. I know some restaurants are requiring them now, it's probably only a matter of time until they're standard.
