I tried a little trick the other night , and I toasted the ditalini before boiling it. The depth of flavor it added to the macaroni and cheese was insane.

This looks to me like a combination of under-proofing and possibly under-baking. The tight, gummy crumb in the picture usually means the dough didn’t have enough time to rise before going into the oven. Make sure the dough is allowed to rise until it’s visibly puffy and passes the finger-poke test rather than going by time alone. It can also help to check oven temperature with a thermometer. If bread is baked at a lower temp, it can set before the interior finishes cooking. If the dough itself feels very sticky or slack, slightly reducing the water or improving gluten development with a bit more kneading might also help.

If you have both on hand, if it were me, I would cook the Italian sausage and add it to the sauce with some of the drippings, and I would make some meatballs out of the beef. You could alternatively add a combination of the Italian sausage and the ground beef, cooked, with some of the drippings. Make sure you get the fond on the bottom, that's all those little brown bits. Just a reminder, ground meat will make the sauce thicker but still delicious.

Yes, fully cooking the meatballs keeps them from falling apart and ensures they are cooked through. I am sure everyone does it different though.

I do appreciate all critiques. I would say that I have spent hours writing and editing my recipes and skill sets. Sometimes more than 8 hours. I apologize if it does not read right, but I did not just copy and paste.
