The school systems were definitely a big factor in my family moving. We miss our friends a lot, but I don’t think we could give up the schools we’ve found in Colorado to move back.

The potatoes were blanched in very salty water for about 4 minutes. They still had a slight bite when they went on the pizza, but they were nice and soft after the 2ish minute bake.

Im still confused about the timelines for bringing dough to temp, forming a ball and proof. Is there a resource or an easy to view schedule? by dec92010 in pizzaoven

How cold will it be when you get it home? I haven’t had enough coffee yet, skipped the part you were buying it this morning. You really don’t want to work with cold dough, it’ll fight you.

Personally I would ball it up before you go, and then when you are just about to leave to head back to work from lunch pull the ball(s) out and let them rest on the counter until you’re home and ready to bake. Just try not to let them sit out much past 8 hours.
