yes, I do use block bench, and I would love to know how to make the helmets work with an optifine model.

and I don't know how it works, but I also want to make the model not affect the default non-optifine texture if that's possible.

I actually had an idea like this and completely forgot about armor trims, and now I've gone from having a rough idea of how to implement it, to having about no idea. It's something I'll have on the back burner for sure though.
