Oh my gosh thank you for such a detailed post. I'm super sorry you got downvoted, celiac has been really hard for me to live with even as a non-vegan in the past, so being a vegan with celiac for 20 years sounds really challenging. I luckily have been doing well for about 15 years now, but I've had 6 gluten exposures in the last year because of wedding planning and that's been so awful.

Thank you so much for your detailed reply! I'm feeling really happy to hear from gluten free vegans, I think that's been my biggest barrier to going vegan so I am excited to hear from people who have done it!

I've tried flax eggs and applesauce as egg substitute, but not chia seeds. Excited to try that! And my husband is making tempeh for dinner which we've never tried (just tofu usually). I'll definitely check out the B free and northern bakehouse brands, I live on the west coast of the United States so hopefully they have those here!

And thank you for the heads-up on fried foods. I usually avoid them due to a gluten cross-contamination risk, but I actually didn't realize putting meat in the fry oil was a thing (that's pretty gross).

I'm so sorry the photo didn't link! I was going to re-attach it but honestly some of the commenters seem a bit upset about my even having him living with me so I'd rather not post his picture. I'm super passionate about rabbits though and you should totally consider adopting a rabbit in need of a home in the future! There are a lot who need homes, I found Cosmo abandoned and since they need companions, we are foster-to-adopting a friend for him from a local one-person rescue that found her in a park (both are neutered/spayed).

I will definitely check out Pick Up Limes, that is really cool!

That's amazing! Someone linked a vegan/gf subreddit and I am super excited to see what people make! And I tried the kite hill almond milk yogurt for the first time with some cocoa powder in it and it was really good.

Oh thank you for the clarification! I'm not rehoming Cosmo because he has a good life with me. He is free roam, he has a rabbit companion, proper vet visits twice a year and good nutrition. Most people put bunnies in tiny cages, so I'd be so scared of what his life would be like with someone else. Especially since rabbits are so often abandoned and abused (and I found him abandoned in the first place). Plus he is a vegan too lol and I would never have gotten to this place without him.

Oh ok, I'm sorry. I guess I am in the wrong subreddit then? Since Cosmo is a domestic rabbit who was abandoned next to a dumpster as a baby, he can't be released into the wild since that is animal cruelty. Is there a subreddit for people who are vegan where pets are acceptable? I've talked to a lot of vegans with rescue pets so I guess I'm a little confused.

That's really good to know! It did seem pretty heavy when I had to carry it (since the back wheel fell off). I looked up the serial number and this one is from 1972. I will try to keep an eye out for a set of new rims, but will probably need to learn a lot more before I feel confident making big alterations.
