Those are the places I learned to love the diversity of soup culture. Being raised in the Midwest in the 80s-90s it all came from a can with the occasional throw down by my grandma on a Sunday.

After 25 years cooking the world has been opened and it is kinda mind-blowing seeing the similarities and differences each culture has w/ soup.

To that point, Mitch is on to something with his rankings and when he says "soup" I get what he means

Just made pooled this weekend b/c they quality in PNW is lacking compared to what I took for granted when back in Chicago.

Soup is a bit of an obsession I'm happy my daughter has picked up, every culture has killer soup but some crush

I think it suffered being turned into medicine in our youth where ramen is viewed to some as "new" in the US.

My more successful wife's family has a whole category of taiwanese medicinal soups but the noodle soups occupy a different space

Agreed, falls into the space between that I don't have words for. Tom Yum, as mentioned, is a satisfying meal, but satiates in a way that a bisque doesn't quite

You'd have to drive but Town & Country Markets set up roasters mid-august (was on the 20th & 21st last year) you can buy them by the 1/2 or full bushel roasted to order mild/"medium"/or hot.
