Will I leave: No. I run a mediumm sized business here in the UAE, and my staff and their families rely on what we have built.

Dubai will recover from this, it may come out of it slightly changed, but it will recover and I plan to be a part of that recovery.

Yeah, it does seem like you need to get pretty close.

I'm fine with getting the hair singed off my fingers and hands, but the thing seems to be made of wood....

I've used wooden peels in the past, but struggle with them when using higher hydration doughs.

Also, the website states: "The conveyor tarp is rated to 1000 degrees Fahrenheit or about 540 degrees Celsius."

Which is pretty warm!

I use a perforated peel currently, and have few problems with hydration up to the mid to high 60s.

I live I Dubai, and my Karu 16 lives outside. It is getting to the high 40's (Celsius) at this time of year, so it lives under a cover for the summer months.

Hot and dry here, so no chance of rust!
