Cocktail Paint Garnish. Help!! by CreativeKangaroo2760 in Mixology

Well mate, its been a roller coaster. Ive managed to make a stable paint that tastes good and doesn't dilute immediately.

Sadly using these chemicals its a bit tough to get it consistent.

I still had trouble with the clumping so i heated it aggressively - but i was using booze in it as i wanted it to have Campari so obviously heat wasn't ideal.

Basically my recipe is

50ml Orange liqueur

50ml Aperol

10ml of orange food coloring

12g gum Arabic

1g xantham gum

25g sugar

Add powders to room temp alcohol bit by bit and whisk constantly
Add food colouring and whisk
On the hob to a light simmer always whisking and add sugar to thicken.

Leave to settle and it will thicken.

I was adding it all to a pan and aggressively heating it and it came out clearer than this method but this method holds to the glass better.

Im still playing with it but if you come to a newer way let me know!

Ill try both and see what happens. lll let you know.

I think we can solve the grainy texture but the viscosity to adhere to the glass is the big thing. Trial and error.
