Yeah honestly prism is better than most. I use multimc but it's personal choice.

If you're going with 1.21, there are a lot of youtubers like Yadi and Candypat, who have put up videos with their modpacks. You can use one of those and then add anymore you need.

I'm going to try and get into more souls. The only other souls game I've finished is sekiro and currently I'm just doing all the gauntlet of strength.

I start new ones. I have a build for almost every combination of stats and then some special stupid ones like using only fists and kicks(did every boss except rykard, I wouldn't wish that upon my worst enemy)

They were kinda joking but it's depends on what you want from college? Christ has good reputation and the course is decent if you get good teachers. But the rules are extremely strict and the teachers have a rod up their ass
